Tong Chong Street Market(TCSM)will hold at every Sunday from every November to February. This market features things from fresh farmers’ produce to create the latest food and beverage trends. It aims to support the local independent stores and start-up brand.
At that week, the Market was the special week of Coffee Festival which can let visitors taste the coffee brewed by 20 renowned local and overseas coffee shops
Chris Wan, the partner of Elixir Coffee, hoped that he can promote and share hand drip coffee which can bring out the coffee’s character from the coffee beans and he wanted to share the special coffee beans that chosen by himself from different countries to public through this market. He added different district of coffee beans have their own character in it
Chris highlighted that the hand drip coffee can emphasize those special flavours due to the process of hand drip coffee can be balanced extract coffee beans.“Through this market, I want to change public misunderstanding the taste of black coffee is only bitterness. It should be involved our, sweet and fruity aroma,” he said.
There was a big difference between the hand drip coffee and using coffee maker, for the coffee maker, it was using a huge pressure to extrude the espresso quickly, it may destroy some of the taste in coffee like after taste or fruity aroma. However, the hand drip coffee was more limpid and thick than the coffee made by the coffee machine. It can bring out more characters from the coffee bean and the taste of the hand drip coffee is long-lasting than the one made by the coffee maker.
Chris said that every hand drip coffee barista has their own method to brew a coffee therefore even is the same coffee bean, in hand drip coffee it can be infinite possibilities and totally different taste from different barista. “Every hand drip coffee is special and it is reflecting what the barista wants to give you,” said Chris.
Mario Nigrinis, the co-founder of It is Colombian which sold Colombian coffee, tried to explain what is coffee. He mentioned that “coffee is about its attribute which related to the aroma, the sweetness, the taste, the body and the after taste."
Apart from the hand drip coffee shop, there was another hand made coffee show which was from Taiwan, they said they are trying to bring the downshifting lifestyle to the public. They also bring the speciality coffee from Taiwan to Hong Kong which they are brewing on that day
Of course, the main theme of this market is coffee festival. But there is another subject which is promoting the local farm-fresh products. There was some local farmer to sell their own organic products in which they wanted to promote the healthy eating style and tried to arouse public awareness of the local farmers and their products.
On that day there was a live band performance in the middle of the market. It aimed at giving a relaxing experience to the visitors that they can enjoy the coffee and food with the band show. And the atmosphere around the show was leisurely and relaxing.
